We are seeking an experienced Sushi Chef to join our full-time culinary team.

Position Summary

As a Sushi Chef at Norikase, you will be responsible for preparing and presenting sushi and raw bar items with precision, consistency, and care. This role is ideal for someone who respects technique, works clean, and thrives in a fast-paced, team-oriented kitchen.

Responsibilities

• Prepare sushi, sashimi, rolls, and related menu items to Norikase standards
• Break down, portion, and properly store fish and seafood
• Maintain strict sanitation and food safety standards
• Ensure quality, freshness, and consistency of all products
• Set up and break down sushi station before and after service
• Communicate effectively with kitchen staff and management
• Assist with prep, inventory, and station organization as needed
• Uphold all health department and company standards

Qualifications

• Previous sushi chef experience required
• Strong knife skills and knowledge of fish handling
• Understanding of sushi rice preparation and seasoning
• Ability to work efficiently in a fast-paced environment
• Attention to detail and commitment to quality
• Reliable, punctual, and professional
• Ability to stand for extended periods and lift up to 40 lbs
• Flexible availability, including nights and weekends
